
| Celery Root-Potato Puree |
makes 8 servingsRecipe Ingredients1 lb. peeled and diced fresh celery root2 lbs. peeled and diced Yukon gold potatoes 1/2 cup milk 1 stick unsalted butter, room temperature Kosher salt and cracked white pepper to taste 2 tbsp. chopped fresh chives DirectionsBoil celery root and potatoes together in salted water until tender. Drain then put back in the pot over heat to dry briefly. Mash with milk and butter. Season with salt and pepper and fresh chives. |
