
| Avocado Salad |
Recipe Ingredients1 head romaine lettuce, thinly sliced2 ripe avocados, diced 1 C. kalamata olives, pitted 1 C. diced tomato 1 C. kidney beans 1 C. green onions, diced 1 whole lemon, juiced 1/4 C. fresh cilantro, chiffonade 2 tablespoons olive oil 2 teaspoons garlic, finely chopped salt and pepper to taste DirectionsCut romaine lettuce into 1 inch long ribbons, wash and trdy with paper towels. Mix cilantro, lemon juice, olive oil and garlic. Mix remaining ingredients with lettuce. Toss in dressing and top with salt and fresh ground pepper to taste. |
