Serves 4Recipe Ingredients4 cod filets3 T. olive oil 1 T. basil, julienned 1 t. minced garlic pinch red pepper flakes pinch salt and pepper 1/2 c. bread crumbs, seasoned SAUCE RECIPE 1 can 14-oz. whole tomatoes 2 t. olive oil 1 t. minced garlic pinch red pepper flakes 1/2 T. basil leaf, julienned pinch salt and pepper DirectionsPreheat oven to 350ºF.Mix olive oil with seasoning from first part of recipe. Place cod filets flesh side down in seasoned oil. Let sit for 5 minutes. Place cod flesh side down into bread crumbs. Place flesh side up onto sheet tray. Bake at 350ºF for 25 minutes or until internal temperature reaches 140ºF. In a bowl, crush tomatoes by hand. Add remaining sauce ingredients and mix well. Serve the sauce at room temperature or slightly chilled on the side. |
