
| Broiled Swordfish with Apricot Glaze |
Recipe Ingredients1 (12 oz.) can apricot nectar1/2 c. prepared strong coffee 1/4 c. dry white wine or vermouth 1 tbsp. oil 2 lb. swordfish steaks 1 (16 oz.) can apricots, drained 1 tbsp. butter salt and pepper paprika DirectionsMix nectar, coffee and wine. Heat to boiling and cook uncovered for 5 minutes. Heat oil and butter until melted. Brush swordfish with butter mixture. Sprinkle with salt, pepper and paprika to taste. Broil 5 minutes; turn. Pour 1/2 coffee mixture over fish. Broil 5 minutes more. Heat apricots in remaining sauce. Spoon sauce over fish. Serve immediately. |
