
| Crustless Sweet Potato Pie |
*GLUTEN-FREE RECIPERecipe Ingredients3 ½ lb. fresh sweet potatoes, baked until soft1 ½ c. sugar 6 eggs 1 ½ sticks butter, melted ¼ t. nutmeg ¼ t. cinnamon ½ t. vanilla ½ t. salt 1 c. pecan pieces ½ c. buttermilk DirectionsPeel and mash sweet potatoes. Add eggs, spices, sugar, salt, vanilla, and butter. Mix well with a whisk. Place mixture into a buttered9” x 13” pan. Sprinkle with pecan pieces. Bake at 350° F for 30-35 minutes or until the internal temperature reaches 165° F. |
