Cool fuel for hungry, sporty kids! |
If your kids play soccer, football, tennis or any other autumn sport,
you’ll know about the importance of a light snack before games and
practice. Kids may be tempted to reach for a bag of chips or a candy
bar, but the truth is that a high-energy snack, which contains protein
and slow-release carbohydrates, can keep them fueled much longer.
Chef Pete Julian’s recipe for Granola and Berry Parfait is perfect at
any time of day (no after-school sports? Try whipping it up for
breakfast) and takes just minutes to put together before a big game.
The easy-to-assemble recipe features Jessica’s Cherry Almond Granola (a
Michigan-based company). Jessica’s Granola varieties are also a great
stand-alone snack that kids can take to school for healthy munching
throughout the day.
This recipe serves four, so there’ll be plenty for team-mates too. Game on!
Granola and Berry Parfait
Serves 4
3 c. Vanilla Yogurt
1 c. fresh blueberries
1 c. fresh raspberries
2 c. Jessica’s Cherry Almond granola
Line up four parfait or tall glasses. Place ¼ c. of yogurt into the
bottom of each glass. Top with ¼ c. of granola. Top granola off with 2
tbsp. of blueberries.
Begin another layer with ¼ c. yogurt. Top with ¼ c. granola and then
top off with 2 tbsp fresh raspberries. Top with ¼ c. yogurt. Garnish
with fresh mint sprigs
