Back to school, back to tasks, and there’s hardly any time to make a great dinner. It’s easier than you think – with a rotisserie chicken from Hiller’s.

Day One: Carve the chicken, make a pot of rice and a fresh salad and voila, your evening meal will be satisfying and simple. What’s more, it’s good for you.

Day Two: Chicken leftovers. Here are five great ideas for using what’s left from the rotisserie chicken.

Idea #1: Spicy-Sweet Asian Chicken and Noodles

Shred leftover rotisserie chicken meat and mix with cooked buckwheat noodles, shredded carrots, red bell peppers, scallions and peanut sauce. Top with chopped mint or cilantro and a dollop of Asian hot chili sauce and let your taste buds dance.

Idea #2: Hearty Italian Chicken Sandwich
Dice leftover rotisserie chicken meat and mix with 2 cups finely chopped hard-boiled egg, 2 chopped anchovies, half of a small onion, one-third cup mayonnaise, salt and pepper to taste. Serve on thick, buttered bread. * Makes a great sandwich for school or work!*
Idea #3: Brie Apricot Chicken Melt
Stir together 2 cups shredded rotisserie chicken and one-half cup apricot jam in a saucepan. Cook over medium heat until warm. Serve the mixture on toasted bread with mustard and slices of brie cheese.
Idea #4: Southwest Chicken Wrap
Combine 2 cups diced rotisserie chicken with three-quarters of a cup of salsa. Tuck into a tortilla wrap with bacon and avocado slices.

Day Three: Chicken Soup

After you pick the carcass clean, throw whatever is left into a big soup pot and make a hearty chicken soup that will feed your family for weeks (and months) to come. It freezes well! To the chicken carcass, add chicken stock or boullion cubes, water, diced carrots, celery, one whole onion, fresh parsley and dill, whole peeled parsnip, salt and pepper. Optional: sweet potato slices, diced yellow squash or zucchini. Bring to a boil, then simmer for two to three hours. Once cool, divide into several portions and freeze. (When reheating, add cooked noodles, rice or dumplings!)
