Step-by-Step to Great Gluten-Free Fare

Hiller’s Chef Peter Julian teaches delicious and easy gluten-free cooking.

Hiller’s Chef Peter Julian led two sold-out cooking classes at St. Joseph Mercy Health System in Ypsilanti recently, teaching participants how to make great gluten-free holiday food.

“The class loved Chef Pete,” said Jennie Hahn, the hospital’s clinical nutritionist. “He brought recipes that were healthy and tasty. He showed how to bring out the flavor.”

Chef Pete meandered around the hospital test kitchen, showing students how to chiffonade basil and answering questions.

“I develop gluten-free recipes so anybody would enjoy them,” says Chef Pete. “We find substitutes for flour in a sauce and make great dishes that just happen to be gluten-free.”
