(December 26-January 1)

Kwanzaa is a secular seven-day holiday celebrated by some African-Americans.

First observed in 1966, Kwanzaa celebrates African heritage and emphasizes family and community. The word comes from Swahili, meaning first fruits; each day focuses on one of the Nguzo Saba, or Seven Principles: unity, self-determination, collective responsibility, cooperative economics, purpose, creativity and faith.

Traditional African dishes eaten on Kwanzaa include koki (a black-eyed pea appetizer); peanut soup; Jollof Rice (one-pot rice); okra and greens; yams or sweet potatoes, fruit salad and coconut pie.
