October signals so many changes – brilliant red and yellow leaves falling, cooler breezes, football games and homecomings. It’s also time for Oktoberfest beer – a special, limited, bottom-of-the-barrel beer best sipped slowly so as to enjoy the rich, sweet thickness. Before refrigeration made it possible to produce beer year-round, a rich round of full-bodied, dark copper beer was churned out in March and laid in caves for fall bottling. Flavor developed as the beer fermented at the barrel’s bottom; after 10-12 weeks in caves, this limited quantity, seasonal beer was available to drink by late summer or early fall. In Germany, the term Oktoberfest refers to a festive time when malty Märzenbier debuts, a medium-strong version of amber-red Vienna beer. The most common Munich Oktoberfest beer served at Wies'n (the location for Munich’s Oktoberfest celebration) contains 5-6% alcohol by volume, has a mild hop profile and is labeled a Bavarian Märzenbier in style.
